Washed for around 3 weeks and wrapped in spruce bark to create a rippled appearance on it's surface. It's then further aged for 2-3 weeks to give it its full flavoured fruity taste and rich, lucious texture. Eat as it comes, or bake it for an indulgent fondue style cheese!
